What is Making Me Happy: Top Chef (again)

Following the model of NPR’s Pop Culture Happy Hour and, to a lesser extent, the Make Me Smart daily podcast, I want to remind myself that there are things that bring me joy. These posts are meant to be quick hits that identify and/or recommend things—usually artistic or cultural, sometimes culinary—that are making me happy in a given week. I am making this quick format a semi-regular feature.

This week: Top Chef…again.

I know, I already talked about Top Chef as something making me happy, but I didn’t anticipate how much I was going to become obsessed with this show. I usually watch the show while exercising and my current workout routine means that it takes me two sittings to digest a single episode, but this week’s episode just grabbed me such that I watched it from start to finish.

This week’s challenge was “Restaurant Wars.” However many contestants are left are divided into teams and challenged to create a cohesive dining experience for their guests in a short period of time. Because of the pandemic restrictions, the challenge this season was to create a chef’s table dining experience where the diners get interact with the chefs making their food and watch the process. In addition to putting pressure on the contestants to work together and work under the eyes of the judges, this format also required the contestants to work the front of the house.

Although everyone on the show is an incredible chef, the randomly chosen teams were unevenly stacked just in terms of technical ability. The one team had Gabe, Dawn, and Sara — three of the people who had consistently been landing at or near the top — and a fourth person, Chris, whose performance had been more uneven, but who had also won challenges. The other team featured probably the odds on favorite to win the contest, Shota, but also one person who was nearly eliminated last week in Maria, one who was consistently near the middle in Byron, and Jamie, who had already been eliminated and won her return at Last Chance Kitchen.

Naturally, the second team crushed the event.

I was prepared for a dramatic, miraculous turn, but I also worried about the first team from the start. Their menu theme was “fish” and while individual dishes were hits, the overall restaurant was a mess. Some of this is because running a smooth restaurant like this is hard and not something you do in two days, but some of it came down to their choices. They collectively agreed that they would do everything collectively. Each person would make their own dish even when it was not quite clear what the preceding or following dish would be because the individual processes didn’t leave time to taste the dishes. They also agreed to collectively serve their guests and clear dishes, which, not unexpectedly, resulted in them often leaving their guests alone.

It was immediately apparent that the second team had people with experience doing counter service. Shota took lead in designing the menu, suggesting that they loosely follow Kaiseki, the traditional Japanese multi-course dinner, but that each dish be a fusion of Asian and Latin cuisine. With that guiding principle in mind, they crafted a menu for a restaurant called Kokoson, itself a neologism from the two traditions, where almost every dish used elements from several chefs and culminated in a hot pot that everyone helped fashion.

Each team member knew their role. Shota managed the back-of-house, calmly and quietly directing traffic and managing the pace. Maria choreographed the front of house, with help from Byron who took charge of clearing the table. Jamie helped out across the board.

The food, from design to execution, had to be excellent, but what so captivated me about them was how they worked as a team. At one point it seemed that Maria was going to get overwhelmed handling the dining room while Shota, Jamie and Byron were ignoring her requests when, suddenly, they appeared and threw in their labor. Shota took overall lead, but he wasn’t a dictator so much as a facilitator. He made final decisions in ways that smoothed the service, but those decisions sometimes amounted to affirming what someone else had in mind like where they were going to plate dishes or setting the deliberate-but-precise pace at which the dishes came out. Meanwhile, each person was empowered to take ownership of their jobs within the team and fact that so many of the dishes were collaborative meant that everyone was tasting each other’s dishes and staying in-sync with the overall vision of the menu.

Things obviously would have been different in another environment where the technical proficiency of your team is lower and the real-world stakes are higher, but, having had a little bit of experience managing a restaurant, I found this performance genuinely inspiring. Shota’s leadership here was exactly on point, but leadership is also made that much easier when a team works together as beautifully as this one did.

I might have only seen eight episodes of Top Chef, but, if I had to pick just one to recommend to someone, it would be this one: Season 18, Episode 8: Restaurant Wars.

American Politics – a follow-up from 2017

I recently received a question on a post published back in 2017 that used Thucydides’ description of the Oligarchy of 411 to reflect on the protests then going on. In short, this post drew together a couple of threads, including how we remember protest in Ancient Greece given the limits of our evidence and the my concerns about the consolidation of power in the executive branch. The reader asked: how do I feel about the consolidation of power in the executive post 2020?

By way of preamble, two caveats:

First, the original post was, as much as anything, a reflection on the limits of our evidence for the ancient world. I have a hard time believing that the weight of the protests of the past few years would fail to leave a trace simply given how much material has been produced. Perhaps some sort of digital apocalypse could render that evidence unsalvageable, but I find that unlikely.

Second, what follows stems from my opinion. I consider myself a reasonably astute political watcher, both as a function of how I interpret civic duty and as a relic of the time when I thought I was going to work in politics—and one of my favorite courses in college was on the American presidency, but my areas of expertise have developed in rather different directions. As such, I am speaking here as a citizen rather than as an expert.

As to the actual question about the growth of the executive, not much has changed.

To his credit, President Biden has also made a conspicuous effort to work through Congress rather than through executive orders. The enormous caveat here is that this has been made possible by slim majorities in both chambers. I don’t want to speculate on what Biden would do if this were not the case, but there hasn’t been a move to substantively curb the power of the executive. To give a couple of examples, President Trump faced a historic second impeachment, but in neither investigation was he convicted by the Senate and most of his worst precedents like eternally-interim appointments were allowed to expire without either being regulated or held to account. Biden may be not actively flexing the executive in ways that expand it further, but that is not the same thing as rolling it back.

For my part, I would like to see regular, transparent processes to hold politicians accountable for their actions.

However, too narrow a focus on the state of the executive in American political life also misses the forest for the trees. That is, a more serious anti-democratic movement developed parallel to, but not directly in-step with the growing power of the executive. Dark money political interest groups have gerrymandered states in ways that force Democrats to win a super majority of the votes to have a slim majority in state legislatures that, in turn, allow Republican state legislators to simply ignore ballot measures approved by the voters. The other priority for these dark money groups has often been to install a favorable judiciary, which was Mitch McConnell’s legislative priority during the Trump administration. These groups would obviously like to have the presidency — there would be less reason for so many states to install voting restrictions after the 2021 election and lay the groundwork to reject an unfavorable electoral outcome in 2024 otherwise — but it is not their singular focus.

When the two came together, as in the obstructionism spearheaded by McConnell that prompted President Obama to work through the executive and thereby gather ever more power or how congressional Republicans enabled President Trump to circumvent Congress to an even greater extent, the result was the expansion of executive power under both Republican and Democratic presidents.

(Reading over the original post, I noticed that I characterized the process as the legislature “acquiescing” to the consolidation of power. This isn’t quite right, as I’ve noted here, but I do still think that the legislature has been complicit in the process.)

Recent events are revealing just how much the American constitutional system relies on a consensus belief in the founding myths of this country and institutional norms. At the same time as the shallowness of the former have been revealed, the latter have been under attack in an increasingly polarized country. The Constitution was never a perfect document, but it has been calcified by originalism, rendering whatever flexibility it contained impossible.

Here in 2021, the consolidation of executive power can’t be untangled from these other threads that are more aggressively eroding the political system. That is what concerns me as a citizen of this country right now, more than the growth of the executive. The first is an existential threat, the second has concrete consequences but I see it as an academic exercise if the first isn’t addressed first.

The Lost

But there are certain aspects of this letter, concrete things, things the letter actually says and which, therefore, I do not have to surmise, that force me to think about family quarrels, about proximity and distance and “closeness” that are not temporal or spatial but emotional.

Daniel Mendelsohn grew up in a Jewish family surrounded by stories. His Judaism was, by his own admission, both inalienable and indifferent such that his love of stories led him to the plays and poems of the ancient Greeks rather than to the Torah of his heritage. Nevertheless, he remained captivated by a particular absence in the stories of his family. That is, the stories of his six family members, his grandfather’s brother, sister-in-law, and their four daughters, who had remained in the small Galician town of Bolechow until the arrival of the Germans. Their names — Shmiel (Sam) Jäger, Ester née Schneelicht, Lorca, Frydka, Ruchele, Bronia — were only ever whispered.

Mendelsohn resolves to recover their stories, setting in motion an epic journey that takes him to Bolechow (now Bolekhiv), Australia, Israel, Sweden and Denmark armed only with a few names and photographs to interview anyone who might have known his relatives or know what happened to them.

What he discovers is more complex than he could have imagined. Some of his interview subjects don’t remember much — they were too young, or were then too old — while others don’t want to talk for one reason or another. But none of them were actually there, so everything they told him was little more than hearsay. They agreed on the broad strokes: Shmiel was a good man, a little deaf, and a butcher with two trucks, a pretty wife, and vibrant daughters. But some remembered two daughters. Others three. (There were four.) Some heard that Frydka was pregnant when she was caught. Some heard that Ciszko Szymanski, the Polish boy who loved Frydka and insisted that they kill him, too, when the Germans found her hidden in the house of an art teacher, was the father.

What is memory? What is memory? Memory is what you remember. No, you change the story, you “remember.” A story is not a fact. Where are the facts? There is the memory, there is the truth—you don’t know, never.

The Lost is a memoir about the search for life amidst death.

Of the roughly three thousand Jews living in Bolechow in 1939, only a few dozen survived the German occupation. The rest were killed: at the hands of a Ukrainian mob, in the German Aktionen that combined humiliation and death, in the gas chambers of a death camp, and in the casual and systematic violence that characterized the Holocaust. Between the occupation and the final Aktion, the Jews of Bolechow did what they could to survive. A few ran or hid, some collaborated as the Jewish police, most worked in labor camps.

Death is inevitable in this investigation, but it is also striking for its account of life. The Lost is filled with memorable small details, such as how Cisko Szymanski’s father, a butcher, had a special room where the Jews of Bolechow could taste forbidden meats in secret, or how Itzak Jäger (another of Shmiel’s brothers), also a butcher, had to leave town under a cloud of scandal. We learn that Frydka and her friends used to attend movies at the Catholic center in town and that Shmiel would bring strawberries back from Lviv.

In prose that echoes the rhythms of Homeric poetry, Mendelsohn weaves the story of his years-long investigation with biblical exegesis about the book of Genesis, the stories of his interview subjects, and incisive observations about monuments and memory.

…graves, gravesites, memorials, and monuments are of no use to the dead but mean a great deal to the living.

And yet, I was repeatedly drawn back to the present moment while reading The Lost. In the time that it took me to read this memoir that reconstructs in excruciating detail the extermination of a Jewish community in eastern Europe, Israel cracked down on protesters and then dramatically escalated an ongoing crisis. The grim irony of reading about descriptions of pitchfork-wielding Ukrainians attacking Jews while watching mobs of Israelis attacking anyone they suspected of being Palestinian was not lost on me. Likewise for the Israeli airstrikes destroying media outlets while following Mendelsohn’s challenges in uncovering anything like direct evidence of the crimes against humanity at Bolechow.

The Lost is not a book about Zionism. It comes up from time to time, as does Israel, but it is not the central focus. Instead, the people in this book dream about Bolechow where Jews and Poles and Ukrainians lived in peace side by side until they didn’t.

It is that sort of detail that stood out to me this week.

Anti-semitism remains a serious problem in many corners, but that is not the same thing as opposing Israeli actions — like the eviction of Palestinian families from East Jerusalem at one of the holiest times of year and during pandemic, no less — that seem taken from the Nazi Lebensraum playbook. A number of years ago at a talk, a scholar of the Holocaust and its legacy asked rhetorically of the West Bank settlements: “where do you think they learned it?”

But even before the German racial programs spilled beyond the borders of Germany, critics of Zionism foresaw the problems. In 1938, Henryck Erlich, a leader of the Polish Bund, the General Jewish Workers Union, declared (in Yiddish):

When Zionists speak to the non-Jewish world, they are outstanding democrats, and they present the conditions in today’s and future Palestine as exemplary of liberty and progress. But if a Jewish state is to be founded in Palestine, its spiritual climate will be: an eternal fear of the external enemy (Arabs), unending fighting for every little piece of land, for every scrap of work, against the internal enemy (Arabs), and a tireless struggle for the eradication of the language and culture of the non-Hebraized Jews of Palestine. Is this the kind of climate, in which freedom, democracy, and progress can flourish? Is this not the climate, in which reactionism and chauvinism typically germinate?

All people have a right to safety and security. What is happening right now in Gaza and East Jerusalem isn’t about Israeli safety or security. It is about politics. I don’t have any love for Hamas, but blaming both sides is a false equivalence. The ghettoization of Gaza is an ongoing policy and Benjamin Netanyahu’s actions have only further stoked ethnic hatred. Israelis have and will die in rocket attacks, but they have the Iron Dome system and bunkers. The Palestinians don’t. To focus on Hamas is to forget that they aren’t primarily the ones losing water, losing medical infrastructure, and dying because of these airstrikes. Palestinian children are.

If The Lost is about recovering life in a Bolechow from a time before the mobs, before the Aktionen, from a time when Shmiel Jäger wanted to live in a town where he was a big deal rather than coming to America and could go by Samuel, and from a time when Polish citizens of Bolechow sacrificed their lives to protect their neighbors, then, this week, that Bolechow seemed further away than ever.

I plowed through Ben Cohen’s The Hot Hand earlier today and am on the fence as to whether to write about it. On the one hand, Cohen had a number of interesting case studies in his discussion of the science of streaks. On the other, I found it much less coherent as a book than, for instance, David Epstein’s Range. It wasn’t even so much that Cohen was wrong about anything he wrote so much as that he had several different things he was working with — the math behind streaks, the psychology of how we perceive randomness, various uses of big data, and the titular “hot hand” — but a lot of the connections struck me as a stretch, such as characterizing groupings of people’s production, which tended to come in spurts, as a the product of being “hot” in the same way as a basketball player. In short, hot streaks do exist, but they’re usually misunderstood and much easier to identify after the fact than in the moment.

I haven’t decided what to read next, but am leaning toward Imbolo Mbue’s How Beautiful We Were and the fifth volume of Neil Gaimon’s The Sandman in some order.

A Memory Called Empire

“So much of who we are is what we remember and retell,” said Three Seagrass. “Who we model ourselves on, which epic, which poem. Neurological enhancements are cheating.”

On some level space operas resemble one another: a galaxy-spanning empire, an exterior threat, an internal revolution, palace intrigue. A Memory Called Empire checks each box.

The sudden, unexplained death of Ambassador Yskandr Aghavn has created a crisis for Lsel Station, a small satellite of the massive Teixcalaanli Empire. For twenty years, Yskandr used his influence at the court to stave off annexation, and factions at court may see this death as an opportunity for expansion. In a desperate bid to retain independence, the Stationer Council has dispatched a new ambassador, Mahit Dzmare, to court armed only with years of training and an out of date imago of her predecessor—a piece of technology that gives her access to his experience and memories.

The out of date imago might be enough, but for its sabotage that causes the connection to her predecessor to burn out at the first moment of extreme emotion. Thus, Mahit is left to navigate the potential fatal rapids of Teixcalaanli using only her training, her wits, and her instincts as to whom among Teixcalaanli functionaries she can trust, all while trying to learn who killed Yskandr and redirect the military ambitions of an empire.

What Mahit finds is that a brewing civil war at court is the greatest threat to the independence of Lsel Station. The reigning emperor, Six Direction, is nearing the end of his life and scavengers are beginning to gather. Six Direction does have a young ninety-percent clone of himself, Eight Antidote, who he is grooming to succeed him (perhaps with a technological boost) alongside two co-regents Thirty Larkspur and Eight Loop. But this likely outcome has not stopped other members of the ezuazuacatlim, the emperor’s closest confidants, from intervening. As far as Mahit can tell, any of these people might decide it expedient to simply kill her — one, Nineteen Adze, she is pretty sure, has both saved her life, tried to have her killed, and held her in a gilded prison. To make matters worse, one of the empire’s most prominent generals, One Lightning, seems posed to stage a coup.

Against these forces Mahit trusts two functionaries: Three Seagrass, who is appointed as her liaison, and a friend of Three Seagrass’, Twelve Azalea. Every advantage Mahit hopes to rely on turns into a double edged sword. That is, except for a crucial piece of information about an unknown alien civilization hovering just outside explored space that could prove the difference not only for the survival of Lsel Station but also for the stability of the entire Teixcalaanli Empire, if only she can figure out who to tell.

I liked A Memory Called Empire quite a lot. Arkady Martine’s academic and civil-servant background were readily apparent, but this didn’t bother me as much as some reviewers whose opinions I respect and the setting of “space” offset a lot of my issues with R.F. Kuang’s Poppy War. Where I found the plot of A Memory Called Empire to be somewhat cookie-cutter space-opera, I thought she did a wonderful job building the setting, both with a planet-city run by an AI and in building out the galactic empire and its satellites. The Teixcalaanli empire is, functionally, a cross-section of the Roman Empire, the Byzantine Empire (her specialty), and the Aztec Empire, all of which were surrounded by small satellite states that were perennially at risk of annexation. Establishing the naming conventions of Lsel closer to those an American audience are familiar with did that much more to allow Mahit to be a reader surrogate lost in the machinations and poetry (literally) of the Teixcalaanli court. I likewise didn’t buy the critique that we are meant to care about the stakes of the Teixcalaanli succession; we’re meant to care about Mahit surviving the crisis however it resolves.

However, what I appreciated most about A Memory Called Empire was one of those words in the title: memory. The imago machines, technology that allowed the wisdom and experience of generations to literally pass down through the generations was a clever wrinkle to the genre that had multiple different iterations throughout the novel. It is introduced to us as a potential crutch at the outset, something that will give Mahit a fighting chance at court, but when hers goes out early on in the story it becomes something else — something she is desperately trying to recover but also something that is sought by others with an almost McGuffin-level of devotion, and an object of debate between Mahit and Three Seagrass. For Mahit, this is the best way to preserve knowledge among a small community, while Three Seagrass sees it as a way of short-circuiting the allusive poetic culture of Teixcalaanli because it allows for replication rather than remembrance.

I have been meaning to write this post for some time now, so it is pretty far out of order relative to what I’ve been reading recently. Since my last books post I have finished both Daniel Mendelsohn’s The Lost, a gripping memoir about looking for his family members killed in the Holocaust, and Ben Cohen’s The Hot Hand, a journalistic look at the science of streaks that had some interesting stories, but that I found frustrating overall.

When students write down what I say…

The semester just ended, which means it is time to review course evaluations. These feedback forms are notoriously problematic, but I encourage students to give me feedback and take what they say seriously. More than just that what students write can end up in a document I use for job applications, these are formative evaluations that can help me refine my practice. That is probably why a single negative review can cause such a sharp sting.

Reader: I got one of those this semester.

But I don’t want to write about that. Instead, I want to share something that happened this semester: a student wrote down what I said. Not note-taking during a lecture, but writing down specific things that I said and then handing me a copy of this list on the final day.

Here’s a taste:

“If a monster’s just out there fishing or something, is it a monster?”

“Moose are big and scary as opposed to brown bears who are big and stupid.”

“Remember people: only barbarians wear pants.”

“Cassandra’s curse is that she’ll never be believed. I’m sure many ladies can relate.”

[speaking of Theseus] “He prays to Big Ocean Daddy.”

Sometimes discussions turn into improv and I say things specifically to prompt a response, here in a seminar on monsters, monstrosity, and classical mythology. Given that this is the sort of thing I did in classes with my favorite professors in college, this was immensely flattering — if also momentarily terrifying.

An Ending: Spring 2021

Here are two things that are true:

  1. My problems this school year were mild when compared to most people.
  2. I felt like a zombie for much of the last month because of the grind.

The spring semester felt a little easier in some ways. I mostly adhered to my resolution to KISS, which led to a more regular schedule and had noticeable benefits, particularly in my online class. I was also doing much less course building than in the fall, which allowed to focus more on best practices and maintain flexibility without the course devolving into a haphazard mess.

At the same time, a lot of these improvements were offset by the simple fact that both I and my students came into the semester already battered by an exhausting fall. Right around the time when we would have received our usual spring break I noticed a dip in everyone’s energy levels. I prescribed several “mental health days” late in the semester to try to account for this, but they were just a drop in the bucket. We kept going because that is what we had been told had to happen, but more than one student explained to me that whatever work they were giving me was perfunctory because they just needed the semester to be over.

I had a lot of sympathy for that position.

But I also had a ton of students who kicked ass this semester. Grades are in no way a reflection of personal worth — a good friend of mine aptly describes them as a professional evaluation of performance within a narrowly circumscribed realm — but I had some students earn among the highest grades I have ever seen by embracing not merely the grade rubric, but also the spirit of a class. Some really improved their writing over the course of the semester while also thriving in the open-ended discussion boards. Some threw themselves into their unEssay projects, like the student who melded the topic of my monsters course with the scientific literature review of her own major and produced a 17-page review of representations of mental illness as monstrosity in popular media, even turning the project in early. Others did really excellent work while parenting in a pandemic. I was disappointed that some students got lost along the way, but am unspeakably proud of everyone for making it to the finish line.

In light of these challenges, I have been wrestling with what, if anything, I want to carry forward from this year. The problem I have been facing is that most of what worked well were things that I had already incorporated into my courses. I am endlessly tinkering with tools and ideas to increase engagement and reduce cost. I was already using OER platforms and distributing my materials through the learning management system. I experimented with Discord without much success, but is something I would have done under other circumstances anyway (and probably will again).

Other changes, like going to entirely paperless grading, I abhor. There are no words to express how much I hate grading online. Quick quizzes where most of the work can be automated are one thing, but I struggle to give papers I grade on screen the attention they deserve. Using an Apple Pen on the iPad was, in theory, a step closer, but my clumsy hand-writing just got messier when the platform would even save what I wrote. Then there were the times when the platform refused to load documents. I understand the accessibility issues with asking students to provide hard-copies of their work, but I see enough advantages that I am going to return to grading on paper as soon as safely possible.

I have only been able to come up with two pandemic changes that I want to make permanent.

First, Zoom options office hours. Unlike my aversion to digital submissions described above, I only see advantages to having virtual options for office hours. This is not to say that I’ll eliminate the in-person sessions, but also having virtual options opens up possibilities for students who have other demands on their time and builds in flexibility that just doesn’t exist otherwise. This one will just require some thought as to the logistics (what happens when someone gets stuck in the virtual waiting room while I’m working with someone in person?) and boundaries.

Second, flex deadlines. This one is more of a work in progress based on the approach that I developed for deadlines this year. Basically, a course needs to have specific deadlines so that work is spaced out over the course of the semester and everyone roughly stays on track without falling too far behind.

In past years, I included on my syllabus a draconian late penalty not because I wanted to enforce it but because it used fear to get students to turn work in on time. In recent years I kept that policy, but added a once-per-semester freebie three-day extension. With the pandemic this year, I didn’t feel comfortable limiting that extension to a one-off and felt obliged to accept all late work. This meant significantly more book-keeping on my end, but worked in general.

What I want to do going forward is formalize a policy that was ad hoc this semester. My rough draft:

This course uses flex-deadlines for all assignments except presentations or those due on a weekly, recurring schedule (e.g. not quizzes). All major assignments (papers, take-home exams, projects) have a checkpoint in the syllabus. This date reflects where the assignments should fall in the semester based on the material we cover in class and giving adequate space between this and other assignments. By the time of this checkpoint you must either a) turn in the assignment, or b) requested an extension of e.g. 3- or 5- days. Longer extensions are possible on a case-by-case basis.

Submitting late assignments without communication with receive the following deductions: 0–24 hours late: 0%; 25–48 hours: -5%; an additional 5% reduction for each subsequent 24-hours, to a maximum of 50% off at 11+ days late.

There are some wrinkles I need to iron out here. This policy is harder to enforce with physical assignments (in the past, I have counted it complete with an emailed copy while requesting a hard copy for grading), for instance, and I’m not in love with the percent deductions (I like the 24-hour grace period and capping how much a student can lose for late work — if I give an assignment, I think there is value in the student completing it). I also ran into a problem where students were surprised when the end of the semester introduced a hard deadline. This one may be as simple as setting an earlier due-date for the final submission so that there is a cushion before I am up against the date I have to turn in grades.

However, I see four major advantages to this policy or something like it.

  1. It gives students more agency over their schedules. If college ought to be treated as a job (an unrealistic standard, in my opinion), it is better described as students managing four, five, or six (or more) part-time jobs simultaneously. Time management skills are important to cultivate, but I could say as much for myself.
  2. These are not open-ended extensions, but function something like a contract in that the students have to look at their schedule and tell me how long it will take them to get the work done.
  3. I am not putting any burden of proof on the student. I don’t need a doctor’s note/notarized letter/obituary. You need more time, I give you more time. The only requirement is communication, which, I hope, will improve outcomes overall by making other communication more likely.
  4. It better corresponds to how I grade than insisting that student must have their work in on time. I rarely sit down to grade bit assignments assignment as soon as they come in, so short extensions still mean that everything comes in before I have finished.

The best thing I can say about the 2020–2021 school year is that it is over. I am excited to start the next chapter of my career at Truman State University in August, but a part of me is going to miss these students with whom I went through so much. Now we get to celebrate:

The fall semester feels like it is right around the corner and I predictably have a lot I’m hoping to get done this summer. But, first, let’s all get some rest. We earned it.

The Scapegoat

—That’s the danger with freedom: it’s an abyss. Will you fall in? It’ll depend on you Georgiou.

In May 1948 a Greek fisherman discovered a body floating in the Thermaic Gulf. George Polk was a CBS foreign correspondent then reporting on the Greek Civil War where he was unsparing in his coverage of government corruption and atrocities. Despite receiving death threats, he had nevertheless travelled to Thessaloniki, only to disappear until his body was fished from the bay. The government, naturally, blamed their communist enemies and arranged a show-trial that ended in the conviction of three men: two in abstentia (they also had not been in Greece at the time of the murder) and the journalist Gregoris Staktopoulos, who confessed under torture and served more than a decade in prison.

A fictionalized version of this murder and wrongful conviction serves as a jumping off point for Sophia Nikolaidou’s The Scapegoat (trans. Karen Emmerich).

The Scapegoat consists of two intersecting storylines, though neither strictly adheres to a single chronology. The first plot centers on the 1948 murder of the American journalist, here named Jack Talas, who we meet in the opening pages. At the same time, we are introduced to Manolis Gris, a journalist who accompanies an officer to the police station thinking he is dealing with the theft of his laundry by gypsies that he had reported earlier that day:

“It was twelve years before Manolis Gris made it home. His eyes were still chestnut brown, but his hair had turned gray.”

This narrative unfolds through the voices of people around Manolis, including his sister Violeta, his mother Kyria Maria, and Jack Talas’ widow Zoe (Zouzou), as well as a host of others. We learn how Manolis and his family were refugees relocated from Pontus during the forced population exchanges of the 1920s and how he generally kept his head down while diligently working to support his family. And we learn how Zouzou faced a torrent of accusations after the death of her fiancé as the institutional forces in Greece worked to close the case quickly and ensure that the “right” people took the blame. Manolis’ signed confession seals the deal.

The second plot line flashes forward sixty years. In the 2010–2011 school-year, at the height of the financial crisis in Greece, Minas Georgiou has decided that he does not want to go to college. Previously a star student, Minas’ decision has shattered the peace of his household, particularly devastating his mother, Teta, who gave up a career after college to raise him. Minas’ decision also caused his grades to start slipping in advance of the mandatory exams, which serve as a critical point of divergence for the rest of his life. His history teacher Souk (Soukiouroglou) makes him an offer: instead of completing homework for the class, Minas can complete a research paper and presentation for his grade.

His topic: The trial of Manolis Gris.

Minas throws himself into research, aided by materials put together over the years by his own journalist father — albeit distracted the ordinary pursuits of high school seniors, like trying to strike up a relationship with Evelina, the other star student in the class.

Each plot works on its own, the second somewhat more than the first, but The Scapegoat comes alive in the resonances between the two stories. Nikolaidou takes the universal position that the 1949 trial was a sham that turned the convicted into scapegoats who absolved a community of responsibility for its sins. (These were called pharmakoi in Ancient Greek practice, though the original Greek title of this novel is Χορεύουν οι ελέφαντες, or The Elephants are Dancing.) In and of itself, that part of the story is not particularly exceptional except that she uses the kaleidoscope of voices who articulate the layers of disruption in 1940s Greece.

The second plot, set at another time of disruption in Greece that was creating waves of new sacrificial victims, responds to the first. Three generations of Greeks are invested in Minas’ investigation, and are caught up in a tighter web of relationships than they first realize. Minas’ investigation eventually leads him to Evelina’s grandfather Nikiforos, the lawyer who defended Manolis Gris in 1948, but the old man refuses to speak to him until he arranges a meeting with his grandmother Evthalia — who Nikiforos admired from afar as a young man about to marry. Meanwhile, Souk is the sort of eccentric literary teacher who is easy to admire until you realize the consequences of his methods (his father Tasos knew Souk’s advisor and can’t stand him, but his grandmother, a former teacher, approves). Nikiforos doesn’t see the value in re-litigating the past, but Souk demands that Minas do just that in taking a stand. Minas concludes:

In studying them carefully, in marking passages with his highlighter, Minas had come to realize that justice is an abstract concept. Perfect on paper. But in practice, riddled with qualifications, asterisks, interpretations, clashes of opinion. History books offered no catharsis, as tragedies. did; there were no happy endings, as there were in fairytales or soap operas.

In sum, The Scapegoat is an impressive novel that grapples with the living consequences and echoes of historical events, even as Nikolaidou injects light into that darkness through a number of sweet relationships, none more so that the clumsy tenderness and unbridled optimism of young love.

Since my last books post, I finished reading Charles Soule’s The Oracle Year and David Elliot’s Bull. The latter is a verse re-imagination of the Minotaur story where each character receives a different meter. It wasn’t my favorite riff on the Minotaur story (that would be The Minotaur Takes a Cigarette Break), but it had some powerful moments. I am now reading Daniel Mendelsohn’s The Lost, a memoir about trying to find information about the six family members none of his relatives will talk about — the six who were killed in the Holocaust.

What is Making Me Happy: Top Chef

Following the model of NPR’s Pop Culture Happy Hour and, to a lesser extent, the Make Me Smart daily podcast, I want to remind myself that there are things that bring me joy. These posts are meant to be quick hits that identify and/or recommend things—usually artistic or cultural, sometimes culinary—that are making me happy in a given week. I am making this quick format a semi-regular feature.

This week: Top Chef

As much as I like food, I have never been a fan of cooking shows. Baking, yes, and shows that connect food and travel, but not cooking.

Years and years back I would occasionally watch Iron Chef and a few episodes of Beat Bobby Flay, but always I came back to the deep gulf between the food they prepared and what I ate. More than a matter of techniques, all of these shows built their dishes around an animal protein (fish or meat). While I enjoy the taste of meat, I have never enjoyed cooking it to the point that I phased it out of my home diet nearly a decade ago. The result is that the work to bridge the gulf had never seen worth the effort.

I knew of Top Chef as a cultural phenomenon. I have heard Padma Lakshmi give interviews and listened to people talk about the show, but I had never seen an episode before deciding on a whim to watch this season.

Coming in, I knew loosely what to expect. Each contestant competes in two events each week, a quick fire challenge in which the winner gains immunity for the week and/or a bonus like an advantage in the main event or money. At the end of each episode, one chef is eliminated from the show, shunting them into the Last Chance Kitchen mini-show (more on this in a minute). I also knew that Top Chef would find ways incorporate the setting (Portland, OR), albeit modified for the pandemic, and that the show has diversified its culinary standards over the course of its run.

What I didn’t know was whether I would still be left cold for the simple fact that most of dishes are far from anything I would want to make.

I could do without the corporate tie-ins and a few heavy-handed reality TV edits, but I have found Top Chef utterly delightful to watch nevertheless.

In part, I think the fact that my own cooking has matured in the past few years has put me in a better position to appreciate the skill of the contestants. They are far out of my league in terms of skill and technique — as proprietors and executive chefs, I would hope so — but I can recognize echoes of foods that I make at home now in a way that was not always true. But I was also turned off by the competition side of reality cooking shows. What I like about Great British Baking Show isn’t merely that I make some of the recipes, but the camaraderie among the contestants. They want to win, obviously, but they are also willing to help each other plate a dish rather than hide ingredients from each other. At least in this season of Top Chef I am recognizing that same atmosphere among the contestants. Yes, personalities can clash on team challenges and some chefs are cut to come across as anti-heroes, but only in the mildest of senses.

I can’t speak to the history of Top Chef, but I suspect that this was not always the case. From what I gather, the show started out with lots of contestants who were classically-trained sous chefs and challenges that required them to perfectly execute classical techniques. The result was competition with a harder edge. What I see in this season, by contrast, is a slate of executive chefs and urging from the judges to cook their food. They are still aiming for perfect execution, but what that looks like varies because of the range of food that comes to the table. Multiple chefs bring Mexican food (Maria, Gabe), one is interested in scientific approaches to food (Avishar), one whose professional training was in Japan (Shota), and another who primarily brought Sicilian flavors (Sasha). One seems to use yogurt in most of her dishes (Sara)—to name just a few. I suspect that this emphasis simultaneously makes the food more personal and intimate and reduces some of the direct competition because they are cooking from different backgrounds.

I like to say that most of my favorite podcasts are the ones where I feel like I’m hanging out with my friends chatting about whatever is going on, even if I’m not actually saying anything. I want the same sense if I’m going to be watching reality TV.

Top Chef does a lot of this work, but my favorite part has been Last Chance Kitchen.

As contestants are eliminated, they are shunted into the side competition where they can compete for a chance to return to the show. Each ten minute episode consists of a head-to-head competition that pits the previous LCK victor against the person most recently eliminated in a short challenge judged by Tom Colicchio. Winner stays on, the loser goes home. Two things make these episodes particularly engaging. First, the challenges riff on what caused chefs to get bounced from the competition. When one person served raw chicken, the next challenge requires them to serve a raw protein. When someone serves rubber chicken, they have to gamble on how many parts of a chicken they can serve. Second, though, the eliminated chefs don’t actually “go home,” but stick around in the Last Chance Kitchen, where they cheer on the two people competing. Basically, I get the sense that everyone there is rooting for everyone to make great food. They’re disappointed not to win, they’re also happy to continue to hang out.

Some of what I’m enjoying about Top Chef could be a fluke of this season given the pandemic logistics that it was produced under. The judging table this season has a lot of former contestants on it, which I gather gives the show a different feel that may or may not continue under normal circumstances. Even so, I am hooked.
